Locally, black-eyed peas and fried ripe plantain is revered as the tasty Red-Red, incomplete without cassava flakes (gari), and can be eaten for breakfast, lunch or dinner. This lack of boundary can only be said of few delicacies in Ghana, so that's respect right there. Our recipe adds more respect to Red-Red by stewing the beans in palm oil with fresh tomatoes and onions, and introducing parsley rice and hard-boiled egg. Together, this classic dinner is our all-time favourite.
